Tartufo Bianchetto or Marzuolo – Tuber Borchii Vittadini

Harvesting period: march and april

Similar to its more famous and prestigious cousin Bianco di Alba, Bianchetto has smooth peridium, light yellow.

It’s quite different than Bianco di Alba, the pulp is dark in the middle (brown or dark red) and white/yellow in the external part.

Due to the sandy soil, the shape is usually regular but size is always small, around 10 grams.

Bianchetto is certainly less precious than Bianco di Alba but, due to the small harvest period that last just one month, from the beginning of March to the first weeks of April, Bianchetto is the only good truffle you can find fresh now.
