White Truffle or Marzuolo – Tuber Borchii Vittadini
Harvesting period: March and April
Similar to its more famous and prestigious cousin White of Alba , Whiteout has smooth peridium, light yellow.
It's quite different than Bianco di Alba , the pulp is dark in the middle (brown or dark red) and white/yellow in the external part.
Due to the sandy soil, the shape is usually regular but size is always small, around 10 grams.
Whiteout it is certainly less precious than White of Alba but, due to the small harvest period that lasts just one month, from the beginning of March to the first weeks of April, Whiteout is the only good truffle you can find fresh now.
